I basically followed this recipe but added my own tweaks to it. I used ground chicken instead of beef and homemade pinto beans instead of black beans. I didn’t add any tomatoes or hot sauce to it. I also used my own cornbread recipe which uses whole wheat flour instead of white flour, coconut oil instead of butter/oil & coconut milk instead of regular milk. It gives it a really sweet, creamy cake like texture and I have been enjoying the health benefits of coconut lately. You’ll probably be seeing a lot of coconut in my upcoming posts!

(I also use more beans than meat in my chili recipe)
The edges of the cornbread soaked up all the juice from the chili and were so moist and delicious, if I could, I’d just eat all the edges!
