Paleo/Whole30 Summer Squash Curry

2 Boneless, Skinless Chicken Breasts

1-2 Tbls Coconut Oil

1/2 Cup Chicken Broth

1/4 Cup Half and Half or Coconut Milk

1 Tbls Tomato Sauce

1 Medium Onion

1 Tomato

1/2 of a Zucchini

1/3 of a Yellow Squash

1 1/2 Tbls Yellow Curry

1 tsp Seasoning Salt

1 tsp Ground Ginger

1/2 tsp Cinnamon

Pinch of Red Pepper Flakes (Optional)

Honey to taste, depending on how sweet you like your curry. I do a few rounds of the pan with the good ol’ honey bear (leave out to make whole30 compliant)

Chop the chicken up into cubes and brown in the oil

Add chopped onion to the chicken and cook until slightly tender

Add the spices and seasonings to the chicken and onions

Add the chicken broth, cream or coconut milk, tomato sauce, honey and chopped tomato

Add the squash last so that it doesn’t become mushy

Simmer and allow everything to cook together until the sauce thickens

Serve over cauliflower rice, regular rice, rice noodles or even mashed potatoes.

OR add more chicken broth and some kale and eat as a soup! Similar to this one.
