Tomato Basil Mozzarella Chicken & Sugar Detox – Day 4 & 5

So remember how yesterday I said I had not had any cravings? Well, I guess they were just waiting for me to say that because today I felt like I would do anything for a little bit of sweetness or carbs. I was SOOOO tempted to add a splenda to my coffee, I thought just one splenda won’t hurt. But I didn’t do it. And I felt good after that. And I think my energy is starting to come back and I’ve been sleeping better at night which is amazing!

On to one of the best ways to eat Chicken.

I had a little less than an hour to come up with something for dinner and this is what I came up with:

I had to make the picture big because, well, look at it. Doesn’t it look GOOD? And it was, I scarfed it down in about 5 seconds and didn’t really care about it being hot.

I chopped up a couple chicken breasts into big chunks and cooked them in butter until they started turning brown. Then I added seasoning salt, garlic powder, basil and black pepper.

Once they had cooked with the seasonings for a few minutes, I added about 2 T of cream cheese, because why not? šŸ™‚

Let that melt and coat the chicken then transfer to an oven safe dish and top with sliced tomatoes, mozzarella and parmesan cheese.

I baked it at 350 for about 10 minutes then turned on the broiler and let the top get nice and melty and bubbly and brown.

We had this with some green beans and it was perfect!
