Things are still going great, I can tell my body is changing (internally) for reasons I will not post here…
Anyways, this will be a quick post and I’ll skip the “what I ate for breakfast and lunch” cause it’s not really too exciting.
Here is the exciting part – STUFFED PEPPERS!
I always love having these and always forget about them. I always end up with about 1/2lb of ground beef and never know what to do with it. Well, this is the perfect solution, Beef Stuffed Peppers for 2!
Here are the ingredients I used, I didn’t measure anything so I’ll try my hardest to guess 🙂
1/2lb lean ground beef
1/3rd finely chopped medium size onion
2 garlic cloves, finely chopped
1 tsp garlic powder (I love garlic, ok?)
S&P – to taste
Lots of chopped fresh parsley and a little chopped fresh cilantro
I mixed it all together with my hands and let it chill in the fridge for about 4 hours so all the flavors mix together and become delicious.
I then cut one large green bell pepper (use any color of your choice) in half and stuffed all the meat mixture into the halves.
Bake at 425 degrees for about 30-40 mins or until no longer pink inside. If the top is not brown, turn the broiler on for a few minutes to get it nice and crispy OR about 10 mins before they are done, spread some homemade tomato sauce on top, it will become naturally sweeter and carmelized.
And then eat it! Yum 🙂
That looks absolutely delicious! If you like a bit more spice, consider stuffing poblano peppers, they turn out really well.

OM Freaking NOM! I love stuffed peppers! Here is a simple yet tasty one posted by On My Way to Health. You can also add shrimp, crabmeat, ham, or all to give the peppers a new flavor. IF you add HAM…salt should be used sparingly. 🙂 I’m making this tonight!!
