Stewed Balsamic Beef (Recipe)

Sorry there is no picture for this post, we were so hungry, food got devoured and I totally forgot about taking a picture! This meal was delicious though!

I love to buy stew beef from the store, it’s fairly inexpensive and there is not really much work to be done. It’s already chopped up! Usually I just brown the meat in a non stick pan, add whatever spices I feel like along with some onions, tomatoes, veggies, or whatever and it makes for a great one pan meal.

My favorite variation is to add a little soy sauce (or coconut aminos) and broccoli to make my own sugar free version of Chinese Broccoli Beef. It’s so good, super easy and way better than takeout!

But since it’s been so hot here lately and the last thing I want to do is stand over a hot stove, I pulled out the crock pot.

Add to the crock pot:

1.5 lbs stew beef

About 1/4 cup balsamic vinegar

S&P to taste

Garlic powder to taste (I like a lot of garlic flavor, so I added a lot)

1 large onion, chopped (into very large pieces)

3 roma tomatoes, chopped (large chunks)

Splash of chicken broth

I set this on low to cook for 10 hours, the meat comes out super tender and soaks up all the flavor from the vinegar, garlic, onions and tomatoes. I served this with lightly steamed green beans and baked beans for my husband. Enjoy!
