I made sausage (here is the recipe I ALWAYS use – it’s always good!) from scratch which is really much easier than you would think. And stuffed it into some halved red bell peppers. I made a simple tomato sauce to go on top, it turned out delicious!
Serve with some veggies on the side and you have a simple, filling and delicious meal.
Besides the time it takes to cook, there is hardly any prep.
I used 3 medium sized red peppers, sliced in half. Stuff with sausage, place in baking dish and bake (350 until no longer pink inside, about 45 mins)!

For the simple tomato sauce, I lightly heated some olive oil on the stove and added in one large chopped juicy red tomato (the juicier, the better). Sprinkle in some basil and garlic powder and a little salt and simmer until the tomato is very soft and turns into a chunky sauce. Serve this on top of your peppers!
