Vegan Diet, Day 3

As promised, last night’s dinner was pretty good but to be honest I didn’t eat because I just didn’t feel hungry and I was still full from lunch. So I cooked for Taps. I made him some veggie sausage, potatoes, onions, mushrooms, tomatoes and spinach and just cooked it all together.

So for breakfast today, I had some sourdough bread with strawberry jam and some oatmeal with dried cherries.

Lunch was soooooo good! I made a hot sandwhich with hummus, sauteed spinach and onions, tomatoes and veggie sausage. It was quick to make, super yummy and totally satisfying!

Dinner was also really good! I made couscous with vegetable broth, onions, garlic, carrots and zucchini and eggplant with marinara sauce served with asparagus.

I was having a sweet craving and found some frozen dark chocolate covered bananas that are 100% dairy free! I couldn’t wait and ate one in the car on the way home and it was just what I was wanting…

This blog isn’t too long cause I’m getting sleepy but I just wanted to say that I felt pretty great today, I also felt tired, but I didn’t feel groggy like usual. I don’t really know how to explain it but I just feel better on this vegan diet, no more bloated feelings, I haven’t craved any meats or dairy which I am a little surprised at, but also glad that I am not craving those foods because it makes this easier.

It’s only day 3 but I feel so good about this and get so excited at all the new things I keep thinking to make.

Dinner tomorrow will be easy, we’re having “burgers” and sweet potato fries. I found some Original Vegan Boca Burgers so I’m excited to try that cause I love a good burger!
