Vegan Diet, Day 3

As promised, last night’s dinner was pretty good but to be honest I didn’t eat because I just didn’t feel hungry and I was still full from lunch. So I cooked for Taps. I made him some veggie sausage, potatoes, onions, mushrooms, tomatoes and spinach and just cooked it all together.

So for breakfast today, I had some sourdough bread with strawberry jam and some oatmeal with dried cherries.

Lunch was soooooo good! I made a hot sandwhich with hummus, sauteed spinach and onions, tomatoes and veggie sausage. It was quick to make, super yummy and totally satisfying!

Dinner was also really good! I made couscous with vegetable broth, onions, garlic, carrots and zucchini and eggplant with marinara sauce served with asparagus.

I was having a sweet craving and found some frozen dark chocolate covered bananas that are 100% dairy free! I couldn’t wait and ate one in the car on the way home and it was just what I was wanting…

This blog isn’t too long cause I’m getting sleepy but I just wanted to say that I felt pretty great today, I also felt tired, but I didn’t feel groggy like usual. I don’t really know how to explain it but I just feel better on this vegan diet, no more bloated feelings, I haven’t craved any meats or dairy which I am a little surprised at, but also glad that I am not craving those foods because it makes this easier.

It’s only day 3 but I feel so good about this and get so excited at all the new things I keep thinking to make.

Dinner tomorrow will be easy, we’re having “burgers” and sweet potato fries. I found some Original Vegan Boca Burgers so I’m excited to try that cause I love a good burger!

    i find it really strange that i love vegetarian/vegan substitutes far more than i ever liked meat. sometimes it feels like cheating to eat them, but i genuinely prefer the taste! veg burgers and SP fries are one of my default, go-to dinners! hope you enjoy it 🙂

      There are some meat substitutes that I like better also! Whenever I used to get burgers at a restaurant, I’d usually go for the veggie burger and I really love love love sweet potato fries! Trader Joe’s has the best ones 🙂

    I find that less heavy/white carbs or processed flour and sugar stuff lets me feel more energy. If I slip and eat bunch of ‘junk’, I feel the carb coma come over me. I too feel very ‘satisfied’ with this way of eating. Keep up the good eating!

    ooh all your food looks great! definitely better than when i first when vegan and relied on all store-bought processed stuff. and there are tons of possibilities for food choices when you’re vegan. it’s fun to get creative and work around typically non-vegan recipes! keep up the good work 🙂

    I don’t think I’m ready to make the full switch, but I’m inspired to start incorporating a higher percentage of vegan meals into my diet.

      Yeah you definitely have to be 100% ready for it. I’ve tried it before but never was able to follow through with it but this time it’s something that I was very ready for and something that I really wanted.

    I hope you never have to deal with the cravings! It can be really hard. Are you a large dairy eater to begin with? If you are – I suggest getting some dairy substitutes to have on hand this week. Things like vegan sour cream, shredded “cheese” or whatever you typically have that’s dairy because chances are the farther along you go… you probably will have cravings. Resolve tends to weaken a little with time – not saying yours will for sure though! 🙂

      I used to put cheese and sour cream on everything! But I haven’t missed it at all, I don’t really like how the dairy substitutes taste so I probably won’t get them, at least not yet. But we’ll see what happens, I usually prefer to face my cravings head on instead of trying to feed them with substitutes, but that’s just me.

        I find that with most food the stuff you make at home yourself is MUCH better than the pre-fab varieties available at the store.

        I hate tofutti — yet homemade vegan sour cream is heavenly!! 🙂

        I love to cook and I’ve actually discovered that I cook vegan food much better than non-vegan food, I told my boyfriend yesterday that maybe I was always meant to be a vegan! He even agreed that the vegan food I cook is delicious and he’s even lost a couple pounds. He wasn’t sure at first and was just going to try it for a week but today he said he’ll probably stay on it longer. It’s actually kinda fun 🙂
        I might have to give in and try some tofutti!

      I was surprised at how easy it was for me! I’ve tried in the past and had a hard time sticking with it for more than a few days but something’s different this time, maybe I was just ready for it! Try cutting one thing out at a time, the first week, cut out eggs, then the next week cut out cheese and eggs and so on, that might help you. But then again, you know what works for you. Good luck!
